Beetroot gives the outer flesh of the salmon a beautiful magenta hue. It looks stunning served as an alternative to the slimy shop bought salmon you can buy in supermarkets and is ridiculously easy to prepare.

Thanks to Droitwich Salt for the sample of their Coastline mix used here which contains wild fennel, dulse and lemon verbena.*

Elizabeth Raffald uses beetroot to create attractive ‘Pink Pancakes’ in her Experienced English House Keeper (1769). Although they are served here like a blini you can also serve them slathered in maple or golden syrup.
