Following on from our chat without the Ely & Littleport riots of 1816, freelance writer and illustrator Josh Sutton contributed this dish to the season’s virtual pot luck supper.

Ingredients for two people:
1 tsp olive oil & a knob of butter
50-75g smoked streaky bacon, lardons or pancetta pieces*
50-75g chorizo chunks*
1 onion roughly chopped
400g tin chopped tomatoes
2 cloves of garlic, finely chopped
½ tsp paprika
½ tsp smoked paprika
1 tsp dried oregano
2-3 tsp Henderson’s Yorkshire Relish or Worcestershire Sauce
400g tin of butter beans (drained)
A pinch of salt & pepper to season
Thick slices of bread to serve
Heat the olive oil and butter then fry the lardons, chorizo and onion until they are starting to take on a little colour. Drain off any excess oil (you can use this to fry other things like stir fried vegetables). Add the chopped tomatoes, together with the garlic, spices, oregano and Henderson’s Relish or Worcestershire Sauce. Lower the heat and simmer until the tomatoes begin to break down and the sauce begins to thicken. Add the drained butter beans and a little salt and pepper (if needed - the bacon and chorizo will be pretty salty) then simmer gently for another five minutes. Serve the beans with some chunky slices of bread or even on hot buttered toast.
* You can buy small packs of pancetta and chorizo pieces, which are handy if you’re not sure how to use up large pieces of this charcuterie.
For a veggie version omit the bacon and chorizo and replace Henderson’s or Worcestershire sauce with mushroom ketchup and add one star anise and a good pinch of chilli flakes. Cook as above remembering to remove the star anise before serving.
