When I’m making chicken stock, or boiling chick peas, for example, both of which require about 30 minutes at high pressure, I turn the hot plate off immediately HP has been reached. I leave the PC on the hot plate, and when the pressure has dropped, the stock is made, and the chick peas are perfect.
