Dr Alexander Hunter (1729 - 1809) touted his recipe for potato bread as being the best bread to make toast and butter. Elizabeth David agreed with Dr Hunter and in English Bread and Yeast Cookery book (1977) declares it to be one of her favourites.
Ooo interesting. Sadly, I only have a new potato glut this year (no space for main crops). Do you think this bread would be a gluey mess with new potatoes?
Ooh now that is an interesting question. Providing you could mash the potatoes down into a smoothish puree I suspect it would be fine. However, this could be tricky if they are waxy?

They are quite waxy. I am reminded of my student days when I tried to mash waxy new potatoes and got wallpaper paste...
Lovely post, Sam. I'd forgotten about chewy potato bread toast! And I'd think that any potato you'd think about mashing woud be suitable....
